Life’s Short, Eat More Pie

“Life’s short, eat more pie.” That’s the mantra of Julie Albertson, owner of the Texas Pie Company in Kyle. I got to spend some time with her a few weeks ago for Community Impact Newspaper.

She doesn’t like to take life too seriously. “It’s just pie,” she said while telling the story of her shop.

Albertson gets her recipes from antique cook books and does things the old fashioned way. All of her employees (and most of her customers) are like family. Her love of 1950’s Americana is displayed on the walls of the dining room in the form of old family photos and collections of items she finds at flea markets.

Also, Texas Pie Co. is home of one of the most recognizable icons in Kyle – the giant slice of pie that is displayed on their storefront.

While pie is the signature item, Texas Pie Co. offers a menu of lunch and dinner items. They also have a catering business.
